Well with the nights getting darker, it could be a good time to retreat to the kitchen put your apron on (maybe we could do a Dirt Apron?) and get cooking. Heres a muffin recipe from Tom Kelly:
Simple English Muffins ingredients list:
2 cups of plain white flour.
1 cup of warm water.
1 cup of whole wheat flour.
2 tablespoons of vegetable oil.
1 tablespoon of dry yeast.
1 teaspoon of salt.
Cornmeal.
In a suitably sized bowl, mix the warm water, vegetable oil, yeast and salt.
Beat in the white flour, followed by the whole wheat flour; mix thoroughly.
Oil the surface of the dough with a brush and allow to rise for 30-40 minutes.
Knead the dough until soft; then cut into six pieces and roll each piece in cornmeal.
Form each ball into muffins, four inches in diameter.
Place on a non stick sheet and bake at 175°c (350°F) for 15 minutes. Adjust time if using
a fan oven.
alternativley, the mix can be placed in paper cake ‘cups’ and put in an appropriate tin.
